WThis is an easy version of a cocktail from a new menu. This is a large-volume premix that is loaded with the essence associated with holiday season, making it ideal for your holiday party. Reserve the remaining syrup you can use for breakfast cocktails, sweets, or to make more rounds of this cocktail.
The Bikini Cocktail
Yields 10 guests
For the Clementine Syrup (yields 750ml)
300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Cocktail (makes 850ml, to serve 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine cordial (see above)
Whole cranberries, to garnish
Mandarin essential oil, for finishing
Method
Making the Cordial: Put the listed items in a pot, bring to a gentle boil, stirring so the sugar melts. Next, turn off the burner and leave to reach room temperature fully. Decant into a sterilised bottle, seal and store in the fridge, where it will keep for about four weeks.
Preparing the Batch Mix: Combine every liquid ingredients into one sizeable container, leave to sit for an hour, then strain preferably using cheesecloth, to ensure it's perfectly clear.
When ready to serve: Add 85ml from the premix into a cocktail shaker packed with ice, and stir lightly for one minute to chill. Pour into an cold coupe glass or a similar vessel, top with the cranberries adding the final touch with a brief mist of mandarin oil above the glass.
